南青山から移転したフレンチレストランplein銀座本店を設計した。弊社設計の銀座高木ビルの9階に位置し、木造の杉材とコンクリートスラブ、また厨房機器のステンレスを活かした内装を考えた。オープンカウンター型のレストランにおいてどうしても現れるステンレスの厨房機器。料理をつくり、運ぶための機能性を重視した無骨な工業的素材感を如何に親しみのある客席と統合できるかを検討した。大きな要素である天井を針葉樹構造用合板を浮造りに仕上げた状態で金属塗装をかけ、金属のような木材をつくった。 Pleinという店名は「満たす」という意味がある。天井を波型に折ることで、満たされたグラスの表面が揺れるような波を表現している。

This project involved the design of Plein Ginza, the flagship French restaurant relocated from Minami-Aoyama. Situated on the 9th floor of the Takagi Building in Ginza, also designed by our office, the interior integrates cedar timber, exposed concrete slabs, and the stainless steel of kitchen equipment.

In an open counter restaurant, stainless steel kitchen appliances inevitably dominate the space. The design therefore explored how to integrate this raw, industrial materiality, essential for cooking and service with a warm welcoming dining environment. A major element, the ceiling, was finished with coniferous structural plywood treated with a ukiduri (textured) finish and metallic coating, transforming the wood into a material that visually evokes metal.

The restaurant’s name, Plein, means “to fill.” The folded, wave like ceiling expresses the gentle ripples that appear on the surface of a filled glass, embodying the restaurant’s name in architectural form.
